Okay, today here’s a brownie recipe that is a bit different…

You have a choice to make it either in a bar or in a traditional thicker brownie version.

Brownie bars:

Chocolatey, nutty, with hints of coconut, these bars will tame the urge for a brownie once in a while.

Ingredients

> 1/2 cup organic butter
> 1/2 cup organic unprocessed cocoa powder
> 1/2 tsp ground cinnamon
> 1/2 cup coconut milk
> 2 tbs raw honey
> 1 egg
> 1 cup almond meal
> Good quality cocoa powder to dust (optional)

Directions

Preheat a fan-forced (or regular) oven to 160° Celsius/325° Fahrenheit.
*If your coconut oil has been heated and liquefied, you only need to measure out 8 tablespoons.
Place the coconut oil, cocoa powder and cinnamon in a bowl and combine well. Add the coconut milk, honey, egg and almond meal and mix until combined.
Line a small brownie tin or cake loaf tin with parchment paper. Spoon the brownie mixture into the tin and smooth the surface of the mixture. If you use an 8 by 8 brownie pan, they will turn out to be very thin like bars, but if you use something smaller, they will be thicker like brownies.

Place in the oven for 20 minutes. Remove and allow to cool to room temperature before transferring to the refrigerator for 60 minutes.

Dust the brownie with cocoa and cut into individual portions to serve.
