A much healthier substitute for Cool-Whip and Whipped Cream

Prep Time: less than 2 minutes

Cook Time: none

Ingredients:

1 – 14 oz. can of unsweetened coconut milk (NOT the “lite” kind!)

Or find organic unsweetened coconut cream in a plastic container (much more preferable)

1 Tbsp (or to taste) of Stevia extract,

1 tsp. Vanilla Extract (I use organic, non alcoholic)

dash of organic Cinnamon (optional depending what you’re using this for)

Directions:

If you bought the container of coconut cream simply scoop out the amount you want to use in to a bowl (about half the container,

Now, if you used canned coconut milk then place unsweetened can of coconut milk upside down in refrigerator, preferably overnight,

Scoop just the solid cream portion into a medium size bowl (you usually get ½ can’s worth of solid cream before reaching the liquid milk), being careful not to scoop out any of the liquid milk. Save the liquid for a smoothie,

Now, add to coconut cream in bowl, the tbsp. (or to taste) of Stevia  extract, Vanilla Extract and dash of Cinnamon. Whisk until smooth.

Add to anything like healthy Strawberry Shortcakes, healthy gluten free brownies, coffee, etc.

Try this crowd pleasing fat-burning brownie and top it with this coconut cream!
